Scrumptious Coffee Cake

Okay, so since this is my first post, I want to start with something good, such as Scrumptious Coffee Cake. It’s winter which means it is cold and we all want something warm and comforting. This cake smells delicious as it is baking and it tastes awesome. I believe that the crumble tastes just as yummy as the cake, therefore this recipe has equal proportions of both! Some say it’s breakfast and some say it’s dessert but either way this is a favorite for everyone.
Scrumptious Coffee Cake Makes one 9-by-13-inch cake
Crumble :
2 Cups Dark Brown Sugar
2 1/4 Cups All-
1 Teaspoon Ground Cinnamon
1/4 Teaspoon
1 Cup (2 Sticks) Butter, Melted
Cake Batter :
3/4 Cup (1 1/2 Sticks) Butter
1 Cup Granulated Sugar
2 Large Eggs
2 Teaspoons Pure Vanilla Extract
1 Cup Sour Cream
2 Cups All-Purpose Flour
1 1/4 Teaspoons Baking Powder
1/2 Teaspoon Baking Soda
3/4 Teaspoon Salt
Preheat the oven to 350*F. Coat a 9-by-13-inch pan with nonstick cooking spray.
To prepare the crumble: In a medium bowl, stir together the brown sugar, flour, cinnamon, and salt until combined. Add the melted butter and stir with a fork until combined and the mixture forms large, moist lumps. Set aside.
To prepare the batter: In a large bowl, beat the butter and sugar together in a mixer set on medium-high speed until light and fluffly, 3-4 minutes. Add the eggs, one at a time, beating just until combined. Beat in vanilla, and sour cream. Fold the flour, baking powder, baking soda, and salt into the batter.
Spread the batter evenly into the pan. Use your hands to sprinkle the crumble over the batter, make sure some of the larger clumps remain. Cover the batter completely with crumble.
Bake until a skewer inserted into the center of the cake comes out clean, and the crumble is slightly crisp, 30-35 minutes. Let cool 10-15 minutes then sprinkle with powdered sugar and serve.
Enjoy!!
